Parliament Square Coffee opened its flagship café and artisan bakery on 27 March 2026 at 1 Cook Street in Liverpool’s Commercial District. Spanning roughly 3,500 square feet across two spacious levels, the venue was custom-designed to bring third-wave speciality coffee, an open craft bakery, and modern meeting facilities to the city's legal and professional quarter.

What Parliament Square Coffee does

The venue integrates three distinct services under one roof: an express morning espresso counter for commuters walking between James Street and Castle Street, an open-theatre craft bakery producing fresh viennoiserie and sourdough every morning, and a bright 120-cover daytime dining lounge equipped with accessible power outlets for laptop working and professional meetings. Operating 12 hours a day from 7:00am until 7:00pm, it transitions seamlessly from early-morning breakfast trade into relaxed late-afternoon wine and coffee gatherings.

Speciality coffee and Ozone roasters

The coffee program is run in partnership with certified B-Corp roasters Ozone Coffee. The bar runs a state-of-the-art multi-group espresso machine alongside temperature-controlled batch-brew stations:

  • Espresso and Milk Coffees: Seasonal house espresso blends balanced for flat whites, lattes and cortados with organic British dairy or minor figures oat milk.
  • Batch-Brew Filter: Light-roast single-origin African and Central American coffees rotating weekly for clean, fruit-forward black coffee drinking.
  • Teas and Cold Drinks: Ceremonial Japanese matcha lattes, spiced chai, cold-brew coffee on tap, and fresh iced fruit coolers.

The open craft bakery: Pastries and sourdough

Positioned behind glass screens in the main room, the in-house craft bakery is led by Head Baker Jess Garland. Guests can watch the pastry team lamiating butter dough, braiding loaves, and pulling steaming trays directly from deck ovens:

  • Classic French butter croissants and pain au chocolat
  • Cardamom and cinnamon morning twists
  • Dark chocolate and hazelnut babka buns
  • Pistachio cream cruffins and giant soft cookies
  • Daily artisan sourdough loaves baked for retail sale

The kitchen: All-day brunch and lunch

The kitchen runs an ambitious daytime menu prepared with regional ingredients:

  • Poached Eggs on Sourdough: Free-range poached eggs with choices of smoked back bacon, cold-smoked salmon, or avocado with chilli flakes.
  • Wild Mushrooms on Toast: Pan-fried forest mushrooms with garlic, tarragon butter and shaved parmesan on toasted sourdough.
  • Hot Pressed Sandwiches: Salt beef Reuben toasties with Swiss cheese and sauerkraut, alongside grilled Mediterranean vegetable focaccias.
  • Nourish Bowls: Quinoa, roasted sweet potato, edamame, shredded kale, and sesame miso dressing.

The bookable business meeting room

Recognising its location in the business district, the venue features a private 12-person boardroom suite on the lower floor. Equipped with high-speed commercial Wi-Fi, a large 4K presentation display screen, and video conferencing hardware, the space can be reserved by the hour or half-day with bespoke coffee and pastry catering.
